Production Item Count Process

  1. Understand what production item count shows on the KDS
    1. Production item count helps prep cooks who need to know at a glance how many of each ingredient is needed to fulfill all of the orders that have been sent to the kitchen at any given moment.
    2. This ensures that high volumes of orders can be fulfilled quickly without taking time to read through dozens of tickets on the KDS.
    3. Production item count is similar to All Day Display, but All Day Display summarizes at the item level, such as 5 Double Cheeseburgers, while production item count summarizes at the ingredient level, such as 10 Burger Patties.
    4. Note: All Day Display takes an extra button click to complete, and production item count is always displayed at the bottom of the device. To learn more, check out this Support Center article: Get Started with KDS All Day Display.
    5. Production count is only available for items, and not modifiers.

  2. Create production items in Toast Web
    1. In Toast Web, navigate to Kitchen > Kitchen stations > Production items.
    2. Select + Add to create a new production item.
    3. Create production items for ingredients such as beef patties, wings, chicken breasts, or any items that are ordered at high volume in your restaurant that you wish to aggregate on your KDS device.
    4. Select Save and publish your changes.

  3. Attach production items to menu items
    1. Once you've created your production items, attach them to specific menu items.
    2. In Toast Web, navigate to Menus > Edit menus and find the item you wish to track production items for.
    3. Scroll down to the Production Items setting under the Preparation section.
    4. Select the related Production Item from the drop-down menu.
    5. Enter the quantity of the production item.
    6. Select Save and publish your changes.
    7. Repeat this process with each item that has a production item you want to track.

  4. Configure production items on the KDS device
    1. Once production items are created and attached to menu items, set your KDS device to show production items.
    2. From the main menu of the Toast app, navigate to Setup > Device Setup.
    3. Scroll down to the Kitchen Setup section and select Production Items.
    4. Select which production items you'd like visible on this particular screen.
    5. Select Continue to confirm your selection.

  5. Review how production item counts appear and update during service
    1. Once production items have been configured in Toast Web and on the device, you won't need to do any additional work.
    2. Your production items will appear at the bottom of your KDS screen.
    3. The numbers will only include fired items.
    4. If you're using course firing or item fire by prep time and something hasn't fired, the item count will not include that item.
    5. The item count will decrease when the related item is fulfilled.

  6. Include held tickets in production item counts, if needed
    1. By default, held tickets are not included in your production item count.
    2. You can change your settings so tickets that are held via automated and expediter course firing are included in your production item count.
    3. Note: This feature will only be available when the KDS module is enabled and will not include any items marked as hold on the POS device.
    4. In Toast Web, navigate to Kitchen > Pacing > Meal pacing.
    5. Check off Enable course pacing for the Course Pacing setting.
    6. For the Sending Courses setting, select Send all courses to kitchen immediately.
    7. For the Held Tickets setting, select Show at both expediter and prep stations.
    8. The option for All day view with held items will show up. Select Include held items in all day view and production item counts.
    9. Select Save and publish your changes.
