Is it possible to set different tip option percentages for digital receipts and online ordering, or do they have to be the same?

No, it is not possible to set up different suggested tip percentages for different order sources. The Customize Tip Percentages setting on the UI options page will apply to any source where tipping is enabled, including Toast Online Ordering and digital receipts for dine-in orders.
