When the Save button is gray on more than one page, the cause is usually your web browser. Work through these steps in order:
You should now see the Save button turn blue when you make a change. If it does, your changes will save normally.

When the Save button is gray on only one page or for one action but works elsewhere, the cause is usually permissions. The page is visible to you, but you do not have the permission needed to save changes there.

When you create a new item with variations (for example, a retail item with sizes) and the Save button stays gray instead of turning blue, the variation setup may not be accepted by the page yet.
