Despite a restaurant's best intentions, not everything purchased can be sold, even if you carefully monitor your inventory. Accidents happen, and one-off events like burnt food or exploding kegs can add up to impact your bottom line.
xtraCHEF's Manage Waste feature gives you the actual dollar impact of these events, so you can pivot as necessary to keep things on track and ensures your Actual vs Theoretical Analysis reflects a true variance even during months where nothing seems to go right.

To access the Manage Waste feature, select Inventory > Manage Waste. Select + Add Waste to begin logging a new waste entry.
If you are logging waste from a previous date, select a date from the calendar drop-down.
With your date chosen, find and select the inventory item or ingredient that has been wasted. To narrow down on a particular ingredient, you can Search or select a Type. Best practices call for logging waste by Product. Doing so will ensure accuracy in Inventory Analytics. For more on products, visit .
Then select a Reason to indicate the type of waste being logged and insert a quantity.
You may also want to share notes or an image for your records. However, this is an optional step. To do so, select the three dots next to Wastage Total.
You can indicate reasons and quantities for multiple inventory items at a time. Then, when finished, select Submit near the top right of your page. Immediately after selecting Submit, you will be presented with the completed waste log for the day.
