Where can I add the cost of a menu item so that I can track the profit per item sold?

There is no field in Toast Web to track the cost of goods sold.

For restaurants, you can add xtraCHEF to track your inventory. It has a Cost of Goods Sold (COGS) feature that will allow you to enter these costs and more.
